Turkey + Spinach Sweet Potato Quiche
/This is the recipe that finally spurred me on to create this site. Nothing like a quiche to get the party started, amiright?!
I have had the dream of creating a site to share food with others brewing in my heart and swirling in my head for over a year now. Like a good pot of coffee, I think certain ideas need time to steep and take shape in your head before they can come to life. And, after lots of thinking, lots of notes of ideas, recipes, thoughts and dreams of how this site can be used to encourage others- HERE WE ARE.
I did the Whole30 for the second time in January... (well, the Whole27... another story for another day.) and I found a few recipes I like, melded them, changed them up and came up with this really wonderful breakfast quiche that I would eat throughout the week for an easy breakfast option! I shared my discovery and had so many people messaging me asking me to share the recipe... of which there wasn't truly one, so I decided to write it all out the way I had made it. My first recipe. I thought, "Well I should probably just go ahead and build an entire website to share this one with." Totally logical chain of events, right?
This quiche can also be made into a breakfast casserole, and any way you cut it- its pretty near perfection. If you are feeling iffy about using sweet potatoes in a savory breakfast dish, I promise you will not regret it! The turkey is truly transformed into an italian sausage, the freshness of the spinach and the hearty sweet potatoes will fill you up and help you start the day off right!

INGREDIENTS
- 1 Tbsp Olive Oil
- 1 Onion
- 1 Lb Ground Turkey
- 1 tsp Ground Black Pepper
- 1 1/2 tsp Italian Seasonings
- 1 tsp Garlic Powder
- 1/8 tsp Red Pepper Flakes
- 3/4 tsp Fennel Seeds
- 1 Sweet Potato
- 3 Cups Fresh Baby Spinach
- 10 Eggs
- to taste Salt + Pepper
METHOD
• Preheat oven to 375.
• Butter/oil/ghee on a pie pan or 8x8 baking dish.
• Mix together the spices in a small prep bowl.
• Dice your onion and sautee in olive oil. Add your ground turkey + Seasoning mixture. Brown the turkey and add your spinach to wilt. Take off heat + let cool.
• Slice sweet potato into enough rounds to cover the bottom of the pan. Once covered, sliced extra + cut into appropriate sizes to cover the sides of the pan as a crust.
• Whisk 10 eggs in a medium bowl. Salt + pepper lightly to taste and add the slightly cooled Turkey and spinach mixture to the eggs. Stir to combine.
• Pour mixture over the crust + bake 35-45 minutes or until top is lightly browned and egg is cooked thoroughly.
I let this cool, slice + store it to eat throughout the week!
